As hospitality businesses seek new ways to serve hungry customers, Melbourne sandwich shop Nico’s Deli is looking to the past with its self-serve ‘automat’ concept.

From Thursday, March 12, the Fitzroy institution will offer a range of hot, handmade sandwiches through its grab-and-go Night Shift installation.

Modelled on the automat concept — a kind of self-serve vending operation, popularised across Europe in the early 20th century — Nico’s Deli will offer sandwiches to hungry diners between 7pm and 11pm, Thursday through Saturday.
